Easy Frugal Breakfast Sandwich Recipe

Need a fast and easy breakfast prep? Here’s one and it’s perfect for the freezer too!

What You’ll Need:

  • 6 Eggs
  • 6 English Muffins
  • Optional: Cheese (slices or shredded), Ham, Bacon, Veggies (broccoli, spinach, bell peppers, tomatoes, green onions),
  • Salt & Pepper and Milk, if desired
  • Ramekins or Muffin Tray (large or jumbo)

Directions:

  • Preheat oven to 350º
  • Start by spraying each ramekin or muffin cup
  • Then break one egg into each ramekin or muffin cup
  • Optional: add veggies, shredded cheese, ham cubes, or bacon crumbles to eggs and add salt, pepper, or milk if desired
  • Next bake at 350º for about 15-20 minutes
  • Lastly assemble sandwiches, add cooled cooked eggs, cheese slices, ham, or bacon between english muffins
  • Wrap in plastic wrap and place in freezer bags
  • Store in fridge for 4-5 days or freezer
  • To Reheat: place unwrapped sandwich on microwave safe plate and heat for 0:30-3 minutes (depending on if frozen)
